First, slice the carrots and SPAM into bite-sized pieces suitable for the kimbap. It’s best to slice them not too thickly, matching the size of the seaweed sheet. Julienne the carrots and cut the SPAM lengthwise to fit the kimbap size.

Lightly oil a pan and stir-fry the julienned carrots over medium-low heat. Stir-frying until the carrots are slightly translucent and tender will bring out their sweetness and make them delicious. Adding a tiny pinch of salt here will enhance the flavor even more.
