Like most homemakers, I usually go to bed with plans for tomorrow’s meals. But sometimes, without any side dishes prepared, I find myself in a panic, especially after oversleeping! On days like these, I often wish I had some stir-fried anchovies. This recipe for Anchovy-Kimchi Fried Rice was born out of such a moment. It’s incredibly delicious and a lifesaver when you’re short on time. The savory anchovies, tangy kimchi, and spicy-sweet gochujang create a perfect flavor combination that will have you reaching for seconds. Ingredients- 3 bowls of leftover rice (warmed up)
- 2 ladles of dried anchovies (stir-fried until crispy to remove fishiness)
- 3 sheets of seasoned seaweed (crumbled)
Seasoning- 2 Tbsp Gochujang (Korean chili paste) – the key to spicy-sweet flavor!

Cooking Instructions
Step 1
Place a generous amount of dried anchovies in a dry pan over medium-low heat. Stir-fry them until they become fragrant and crispy, removing any fishy smell. It’s important to fry them until they are nice and crunchy.
Step 2
Add the crumbled seasoned seaweed to the same pan where you fried the anchovies. Stir-fry them together briefly. This step is great for reviving stale, soggy seaweed, making it crispy again. Just sauté lightly so the anchovies and seaweed blend well.
