Super Simple Spicy Mixed Noodles (Bibim Guksu)
Whip Up Easy Bibim Guksu in a Snap!
Feeling a bit sluggish this afternoon with a dull appetite? I made some Bibim Guksu, and it was wonderfully sour and delicious! This recipe is perfect for a quick, flavorful meal when you need a pick-me-up.
Main Ingredients- 1 serving of Somyeon (thin wheat noodles)
- 5-6 Perilla leaves (깻잎)
Sauce Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Vinegar
- A pinch of minced garlic
- 1 Tbsp Maesil-cheong (Korean plum syrup)
- A pinch of toasted sesame seeds
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Vinegar
- A pinch of minced garlic
- 1 Tbsp Maesil-cheong (Korean plum syrup)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add 1 serving of somyeon noodles and cook. To prevent sticking and ensure a chewier texture, add a cup of cold water midway through boiling and bring it back to a boil once more. Cook for about 3-4 minutes, then rinse under cold water and drain thoroughly.
Step 2
In a small bowl, combine all the sauce ingredients: Gochujang, Gochugaru, soy sauce, sesame oil, vinegar, minced garlic, and Maesil-cheong. Stir well until the sauce is evenly mixed. Set aside the toasted sesame seeds to use as a garnish later.
Step 3
Place the drained, cooked somyeon noodles into a serving bowl. Generously spoon the prepared sauce over the noodles, ensuring it’s ready to be mixed in.
Step 4
Mix the noodles and sauce together until well combined and coated. Transfer to a pretty serving dish. Garnish with thinly sliced perilla leaves and a sprinkle of toasted sesame seeds. Enjoy your delicious Bibim Guksu!
