  • 1 medium eggplant
  • A small amount of green onion (white parts, finely chopped)

Seasoning

  • 1/2 Tbsp soy sauce (or soup soy sauce)
  • A pinch of minced garlic (about 1/3 tsp)
  • 1 tsp sesame oil
  • A sprinkle of sesame seeds
  • Salt to taste (optional)

Cooking Instructions

Step 1

First, wash the eggplant thoroughly under running water. Trim off the stem. Then, cut the eggplant in half lengthwise. Place the halved eggplant into a microwave-safe plastic bag. Lightly dampen the bag with a little water – you can mist it with a spray bottle or wipe the inside with a damp paper towel. This helps the eggplant steam beautifully and stay moist.

Place the bag with the eggplant into the microwave and cook on high for about 3 minutes. The exact cooking time may vary depending on the size of your eggplant and the wattage of your microwave. It’s a good idea to check after 2 minutes. The eggplant is ready when it’s tender and can be easily pierced with a chopstick.

Carefully remove the hot bag from the microwave. Take the steamed eggplant out and let it cool slightly. It’s best to mix the eggplant while it’s still warm but not scalding hot. This allows the seasonings to absorb better and preserves the soft, tender texture of the eggplant.

Once slightly cooled, tear or cut the eggplant into bite-sized pieces (about 2-3 cm long). Place the prepared eggplant into a mixing bowl.
