As the weather gets warmer, I find myself craving cool, refreshing dishes! Last year around this time, I made squid raw fish soup using naengmyeon broth and it was a hit. This year, with the approaching summer, I’m feeling the same urge for a refreshing bowl of mulhoe. I picked up a small tray of sashimi from the supermarket and made an even simpler mulhoe sauce to create this incredibly easy raw fish soup. Let’s get started with this simple and delicious recipe for raw fish soup using naengmyeon broth!
Main Ingredients- 1 pack store-bought Naengmyeon (cold noodle) broth (approx. 500ml)
- 1 tray fresh sashimi (approx. 150-200g)
- 1/2 onion
- 1/4 cabbage
- 1/2 cucumber
- 1 serving somen noodles (approx. 100g)
Cooking Instructions
Step 1
Prepare the fresh sashimi. Using pre-packaged sashimi from the supermarket is very convenient. (Note: You can set aside some sashimi for the kids to enjoy separately, and use the rest for the mulhoe.)
Step 2
Let’s make the super simple mulhoe sauce! In a bowl, combine 1 pack of store-bought naengmyeon broth with 2 Tbsp of cho-gochujang, 0.5 Tbsp of minced garlic, 0.5 Tbsp of red pepper flakes, and 1 Tbsp of sugar. Mix well. (Tip: Adjust the sweetness and spiciness to your preference for an even better taste.)
Step 3
Stir until all the sauce ingredients are well combined, then place it in the refrigerator to chill. Making the sauce ahead of time ensures a wonderfully cold and refreshing dish.
Step 4
Prepare the fresh vegetables for the mulhoe. First, thinly slice 1/2 onion and soak it in cold water for about 10 minutes to remove its pungent flavor. This will maintain its crispiness while adding a clean taste.

Thinly slice 1/4 cabbage. The crunchiness of the cabbage adds to the fullness of the mulhoe.

Thinly slice 1/2 cucumber, aiming for a similar thickness to the other vegetables. Fresh vegetables will significantly enhance the flavor and texture of your mulhoe.

These are the simple vegetables prepared using ingredients readily available at home. Plenty of fresh vegetables make for a healthier and more delicious mulhoe.

Now it’s time to cook the somen noodles. Boil about 100g of somen noodles (for one serving) in plenty of boiling water. Once cooked to al dente, rinse them thoroughly under cold water to remove excess starch, and drain completely. Set aside.

Slice the prepared sashimi into bite-sized pieces. Aim for pieces that are not too small, easy to eat in one bite. Fresh sashimi is the star of this dish!

Now, let’s artfully arrange all the ingredients in a serving bowl. Use a deep, wide bowl. Start by placing a generous portion of the cooked and rinsed somen noodles at the bottom.

Pour the chilled mulhoe sauce you prepared earlier generously over the somen noodles. The cold broth mingling with the noodles sets the stage for a delicious experience.

Arrange the thinly sliced vegetables – onion, cabbage, and cucumber – attractively on top. The vibrant colors will make the dish look even more appetizing.

Finally, generously top the dish with the freshly sliced sashimi. The abundance of fresh fish makes the mulhoe look incredibly appealing.
