Thinly sliced sweet potatoes can become watery and mushy if cooked immediately. To prevent this, we’ll lightly cook them in the microwave. Spread the thin sweet potato slices on a microwave-safe plate and microwave for 1 minute, then repeat for another minute, for a total of two minutes. It’s natural for sweet potatoes to turn slightly brown after peeling, so don’t worry.

To the lightly microwaved sweet potato slices, add 1 tablespoon of potato starch and gently mix until evenly coated. Ensure the starch forms a thin layer over the sweet potato pieces.

Now, let’s prepare the egg mixture that will make the cake moist. Crack 2 eggs into a bowl, add 1 tablespoon of sugar, the remaining 1 tablespoon of potato starch, and 100ml of milk. Whisk everything together until smooth and well combined, without any lumps.

Prepare an oven-safe or air fryer-safe dish. Lightly grease the inside of the dish with cooking oil. This step is crucial for easily removing the cake once it’s baked.
