Ingredients
- 1 Tortilla (flour or whole wheat)
- 1 packet of Mozzarella cheese (approx. 100g)
- 1 Tomato (medium size)
- 1 Sausage (or ham, bacon, etc.)
- 2 Eggs
- Pinch of salt (two pinches)
- A little cooking oil (for greasing the pan)
- A little dried parsley (optional, for garnish)
Cooking Instructions
Step 1
First, prepare 1 fresh tomato. Wash it thoroughly and then slice it thinly, about 0.5cm thick. If the slices are too thick, they might take longer to cook.
Step 2
Prepare 1 sausage (or ham, bacon, etc.) and chop it into small pieces, about 0.5cm in size. Adding various ingredients can lead to a richer flavor.
Step 3
Crack 2 fresh eggs into a bowl, add a pinch of salt (two pinches), and whisk gently with a fork until the egg whites and yolks are well combined. Be careful not to over-whisk, as this can make the cooked egg tough.
Step 4
Heat a pan over medium heat and lightly coat with cooking oil. Arrange the sliced tomatoes and chopped sausage attractively in the pan. Once the ingredients start to cook slightly, pour the whisked egg mixture evenly over the entire pan. Swirl the pan gently to spread the egg thinly.

When the egg is about halfway cooked and the surface begins to set slightly, sprinkle half of the mozzarella cheese (approx. 50g) evenly over the pan. The melting cheese will help bind the other ingredients together.

Now, take 1 tortilla and carefully place it over the cheese. Once the tortilla starts to turn golden brown and cook on the bottom, use a spatula to carefully lift the entire pan and flip it over. Be cautious to prevent the ingredients from falling out. After flipping, reduce the heat to low to prevent burning.

On the top side of the flipped tortilla, spread the remaining mozzarella cheese (approx. 50g) on just one half. Then, fold the tortilla in half to enclose the cheese. Make sure the folded side is touching the pan so the cheese melts well and the edges of the tortilla become crispy.

Once the cheese is completely melted and the tortilla is golden brown, carefully remove it from the pan and place it on a cutting board. Slice it into 3 equal pieces for easy eating.
