Ingredients- 1 cup well-fermented yeolmu kimchi (chopped into bite-sized pieces)
- 1 bowl of cold cooked rice (warm rice is also fine)
- 1/4 cup yeolmu kimchi brine
- 1 packet of frozen naengmyeon (cold noodle soup) broth
- 0.5 Tbsp oligodang (corn syrup) or plum extract (adjust to taste)
Cooking Instructions
Step 1
Gather your ingredients: well-fermented yeolmu kimchi, the flavorful kimchi brine, cold cooked rice, and a packet of frozen naengmyeon broth.
Step 2
Gently crush the frozen naengmyeon broth by tapping the packet with a rolling pin or a similar sturdy object until it breaks into smaller icy pieces. This helps create a slushy texture for the broth.
Step 3
In a serving bowl, combine the crushed frozen broth with 1/4 cup of the yeolmu kimchi brine.
Step 4
Add half a tablespoon of oligodang (or plum extract) to the broth mixture and stir well to combine. You can adjust the sweetness to your preference.
Step 5
Place one serving of cold cooked rice into a separate bowl or a deep plate.
Step 6
Generously top the rice with the chopped yeolmu kimchi, then pour the prepared refreshing yeolmu broth mixture over everything.
