Main Ingredients

  • 1 medium zucchini
  • 1 egg
  • 1 tablespoon pancake mix (or all-purpose flour)
  • Plenty of cooking oil (enough to fry without burning)

Dipping Sauce Ingredients

  • 2 tablespoons soy sauce
  • 0.5 tablespoon minced garlic (add more if you like a stronger garlic flavor)
  • 0.5 tablespoon sesame oil
  • A pinch of toasted sesame seeds (for added nuttiness)
  • 5 stalks of green onion, finely chopped

Cooking Instructions

Step 1

First, prepare your zucchini. Slice it about 0.5 cm thick. Avoid slicing it too thinly, as a slightly thicker cut will give you a more satisfying texture when cooked. Cut into bite-sized pieces.

Step 1

Step 2

Place the sliced zucchini into a disposable plastic bag. Add 1 tablespoon of pancake mix. Seal the bag and shake gently. This method ensures the zucchini slices are evenly coated with the flour, making preparation a breeze without extra bowls.

Step 2

Step 3

In a separate small bowl, whisk the egg until smooth. Now, take the flour-coated zucchini slices and dip them into the beaten egg, ensuring each slice is fully coated. Gently shake off any excess egg.

Step 3

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil. Using enough oil is key to prevent the pancakes from sticking and to achieve a beautiful golden-brown color. Carefully place the egg-coated zucchini slices into the hot oil.

Step 4

Step 5

Cook the zucchini pancakes over medium-low heat. Once one side turns golden brown and is cooked through, flip them over and cook the other side until it’s also golden brown. Ensure both sides are evenly cooked for the best flavor and texture.

Step 5

Step 6

While the zucchini pancakes are cooking, let’s prepare a simple dipping sauce. Finely chop the 5 green onions and place them in a small bowl. Add 2 tablespoons of soy sauce, 0.5 tablespoon of minced garlic, 0.5 tablespoon of sesame oil, and a pinch of toasted sesame seeds. Mix everything together well to create a delicious dipping sauce. If you like a little heat, you can also add a tiny bit of red pepper flakes.
