Sweet and Chewy Braised Burdock Root (Ueong Jorim)

Burdock root is rich in inulin, which is known to support kidney function and its fiber content aids digestion and promotes bowel movements. If you’re planning a diet, burdock root dishes are highly recommended for their health benefits and satisfying texture.
Ingredients- 1 burdock root (approx. 200g)
- 1 Tbsp sesame oil
- 50g minced beef (optional)
- 1 cup water or broth (200ml)
- 3-4 Tbsp soy sauce (adjust to taste)
- 1/2 Tbsp minced garlic
- 1-2 Tbsp corn syrup or rice syrup (adjust sweetness)
Cooking Instructions
Step 1
First, peel the burdock root using a peeler or the back of a knife until clean. Rinse it thoroughly under running water to remove any dirt. Then, slice it lengthwise into strips about 5mm thick. Soak the julienned burdock root in water for about 10 minutes to remove its slightly bitter taste and astringency. Rinse until the water runs clear.
Step 2
Prepare a deep pot or pan. Add the julienned burdock root and 1 Tbsp of sesame oil, and stir-fry over medium heat. Once the burdock root starts to soften slightly, add the minced beef (if using) and cook until the beef is browned. When the beef is no longer pink, pour in 1 cup of water or broth.
Step 3
Now it’s time to season. Add 3-4 Tbsp of soy sauce and bring to a boil until the liquid reduces slightly. You can adjust the amount of soy sauce based on the quantity of burdock root and your preference. Start boiling over high heat to allow the seasoning to penetrate the burdock root.
Step 4
Once it starts boiling, reduce the heat to medium-low and simmer for about 10 minutes. It’s crucial to stir continuously with a spatula to prevent the burdock root from sticking to the bottom of the pot. The sauce will gradually be absorbed by the burdock root, giving it a glossy appearance.
Step 5
When the burdock root is almost cooked, add 1/2 Tbsp of minced garlic and 1-2 Tbsp of corn syrup or rice syrup to add sweetness and shine. After adding the syrup, increase the heat to high and stir-fry briefly to ensure the glaze coats the burdock root well. Once all ingredients are well combined and the liquid has mostly evaporated, your delicious braised burdock root is ready! It tastes even better when cooled, so let it sit for a bit before serving.
