Main Ingredients- Dried zucchini strips (hobak ogari) 80g
Aromatics and Oil- 1 Tbsp minced garlic
- 2 Tbsp chopped green onion
- 2 Tbsp perilla oil
- 2 Tbsp cooking oil
Stir-frying Seasoning- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp regular soy sauce (jin-ganjang)
- 1 cup water (standard paper cup)
Finishing Touches- 1 tsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp minced garlic
- 2 Tbsp chopped green onion
- 2 Tbsp perilla oil
- 2 Tbsp cooking oil

- 1 Tbsp regular soy sauce (jin-ganjang)
- 1 cup water (standard paper cup)

Cooking Instructions
Step 1
First, prepare 80g of dried zucchini strips (hobak ogari). Soak them in lukewarm water for about 30 minutes until they become soft and pliable. This step is crucial for tenderizing the dried zucchini, making it easier to cook and enjoy.

Step 2
Once the dried zucchini strips are rehydrated, rinse them thoroughly under running water to remove any dirt or debris. It’s important to drain them well using a sieve. If the strips are too long, you can cut them in half with scissors for a more manageable size.

Step 3
Let’s make the aromatic base for our delicious namul. Heat a frying pan over medium heat and add 2 Tbsp of cooking oil and 2 Tbsp of perilla oil. Add 1 Tbsp of minced garlic and 2 Tbsp of chopped green onion. Stir-fry for about 1-2 minutes until fragrant, creating a delicious garlic and onion infused oil.

Step 4
Once the aromatic oil is ready, it’s time to add the stir-frying seasonings. Pour 1 cup of water (using a standard paper cup), 2 Tbsp of soup soy sauce, and 1 Tbsp of regular soy sauce into the pan. Bring to a gentle boil over medium heat for about 1-2 minutes, allowing the flavors to meld.

Step 5
As the seasoning liquid begins to boil, add all of the rehydrated dried zucchini strips to the pan. Increase the heat to high and stir-fry until the liquid has reduced and the zucchini is well coated with the seasoning. Continue stir-frying briskly to ensure the flavors are absorbed. Stir occasionally to prevent sticking.

Step 6
When the zucchini strips have absorbed the seasoning and the liquid has reached your desired consistency, turn off the heat. Finally, drizzle in 1 tsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds. Toss everything together evenly to incorporate the nutty aroma, completing your hobak ogari namul.
