Ingredients

  • 2 medium sweet pumpkins
  • 3 cups water
  • 3 Tbsp glutinous rice flour
  • 1 Tbsp honey (or sugar, adjust to taste)

Cooking Instructions

Step 1

Wash the sweet pumpkins thoroughly. Since the skin can be quite tough, microwaving them for about 2-3 minutes will make them much easier to peel or cut. (If microwaving, poking a few holes with a skewer can reduce the risk of them bursting.)

Step 2

In a small bowl, combine the 3 Tbsp of glutinous rice flour with about 3-4 Tbsp of water. Mix well until there are no lumps, creating a smooth batter. Adjust the water amount based on the consistency of the glutinous rice flour. If it’s too thin, the porridge will be watery; if too thick, it might clump. Aim for a smooth, pourable consistency.

Step 3

Once the sweet pumpkins are out of the microwave and slightly cooled, cut them in half. Use a spoon to scoop out and discard the seeds and stringy pulp. You don’t need to peel the skin at this stage, as it will soften and break down during cooking. Cooking with the skin on can also add extra nutrients.

Step 4

Place the prepared sweet pumpkin chunks and 3 cups of water into a pot or wok. Bring to a simmer over medium heat. Cook until the sweet pumpkin is tender and easily mashable. Gradually whisk in the prepared glutinous rice flour mixture, stirring continuously to prevent lumps from forming. Once the flour mixture is added, reduce the heat to low and continue to stir and cook for another 5-7 minutes, or until the porridge thickens to your desired consistency.

Step 5

Ladle the well-cooked sweet pumpkin porridge into serving bowls. Stir in 1 Tbsp of honey for added sweetness, if desired. You can substitute honey with sugar, or omit it entirely if the natural sweetness of the pumpkin is sufficient for your liking. Serve warm and enjoy!
