First, peel the sweet potatoes thoroughly. Cut them into bite-sized cubes, similar to Korean ‘kkakdugi’ (radish kimchi). Ensure the pieces aren’t too small, as they might become mushy when mashed.

In a pot, combine 2 cups of water with 2 Tbsp sugar and 0.3 tsp salt, stirring until the sugar and salt dissolve. Adding sugar and salt not only enhances the flavor of the sweet potatoes but also contributes to the overall deliciousness of the salad. If you prefer less sweetness, feel free to adjust or omit the sugar. Once the water boils, add the cubed sweet potatoes and cook until they are very tender when pierced with a fork.

While it’s easier to mash sweet potatoes when warm, allowing them to cool fully before making the salad helps maintain a better texture. While the sweet potatoes are cooling, core the apple and dice it into pieces roughly the same size as the sweet potato cubes. You can peel the apple if you prefer.
