While it might not be exactly the royal court’s ‘Taratjuk’, this simple recipe transforms sweet potatoes into a hearty meal or a comforting soup by incorporating rice. Main Ingredients- 1 medium sweet potato
- 1/4 onion
- 3 Tbsp cooked rice (preferably day-old)

Cooking Instructions
Step 1
First, wash the sweet potato thoroughly. Slice the medium-sized sweet potato thinly. Slicing it thinly will help it cook faster. Peel and thinly slice the 1/4 onion.
Step 2
Melt 1 Tbsp of butter in a pan over medium-low heat. Add the sliced sweet potato, onion, and 3 Tbsp of cooked rice to the pan. Sauté everything together until the ingredients start to soften and become fragrant, about 3-5 minutes. Pour in 400ml of milk and bring it to a gentle simmer. Cook until the sweet potatoes are tender. You’ll know it’s ready when the milk has reduced by about half and the sweet potatoes are easily pierced with a fork. Simmering until the rice grains break down and thicken the porridge is key.
Step 3
Carefully transfer the cooked mixture to a blender or use an immersion blender. Blend until completely smooth and creamy. Ensure there are no lumps for the best texture. If using a blender, be cautious as the mixture is hot.
Step 4
Return the blended sweet potato purée to the pot. Cook over very low heat for another few minutes, stirring constantly, until it reaches your desired consistency. Taste and adjust seasoning with a pinch of salt and sugar if needed. Your delicious and creamy sweet potato porridge is now ready! Serve warm.
