Sweet and Creamy Sweet Pumpkin Porridge (Danho-bak Juk)
Easy Homemade Sweet Pumpkin Porridge Recipe
A delicious and simple porridge made from leftover sweet pumpkin. This recipe is perfect for a light meal or a comforting snack.
Ingredients- 1/2 medium-sized sweet pumpkin
- 1 1/2 cups water (300ml)
- Sweet rice paste (1 Tbsp sweet rice flour + 3 Tbsp water)
- Pinch of salt
- Pinch of sugar (to taste)
- A few jujubes (for garnish)
Cooking Instructions
Step 1
Wash the sweet pumpkin thoroughly. Place it on a microwave-safe plate with the stem facing down. Cover with plastic wrap or a lid and microwave for about 3 minutes. This will slightly soften the pumpkin, making it much easier to cut safely and conveniently.
Step 2
Carefully remove the stem from the microwaved pumpkin, cut it in half, and scoop out the seeds and pulp with a spoon. Add 1 1/2 cups (300ml) of water to the prepared pumpkin and blend until smooth using a blender. If you prefer not to use a blender, you can further cook the pumpkin in the microwave or steam it until very tender, then mash it with a fork or potato masher.
Step 3
Transfer the blended pumpkin mixture to a pot and place it over medium heat. Stir constantly with a spatula, scraping the bottom to prevent sticking, as it begins to cook. The mixture will start thin and gradually thicken as it heats up.
Step 4
Adding sweet rice flour directly can cause lumps, so preparing a sweet rice paste beforehand ensures a smoother porridge. In a small bowl, whisk together 1 tablespoon of sweet rice flour and 3 tablespoons of water until smooth. Gradually add this mixture to the simmering pumpkin porridge, stirring constantly, until you reach your desired consistency. It’s best to add it bit by bit rather than all at once.
Step 5
Once the porridge starts to boil, reduce the heat to low immediately to prevent splattering. Cook on low heat, stirring frequently to prevent sticking and ensure an even texture. This gentle cooking process helps create a smooth and creamy porridge.
Step 6
When the porridge has reached your desired thickness and is fully cooked, it’s time to season it. Add a pinch of salt and sugar to taste. The salt enhances the natural sweetness of the pumpkin, while the sugar adds a pleasant sweetness. Adjust the amounts to your preference.
Step 7
