These are adorable, bite-sized pumpkin donuts, perfectly round and delightful! Made with steamed pumpkin, they are exceptionally soft and sweet, offering a healthy and delicious snack option that the whole family can enjoy. They are so easy to make, making them ideal for cooking with children!
Ingredients- Steamed pumpkin puree, about 1/2 small pumpkin (seeds and skin removed)
- 1 + 1/2 cups pancake mix (approx. 200g)
- Vegetable oil (for frying)
- Sugar (for coating)
- Cinnamon powder (optional)
Cooking Instructions
Step 1
First, prepare the steamed pumpkin. You can steam it in a steamer basket, or for convenience, use a microwave by covering it with plastic wrap and microwaving for about 5-7 minutes until tender. Once steamed, let the pumpkin cool slightly before removing the skin and seeds. Ensure it’s ready for use.
Step 2
In a mixing bowl, add 1 and 1/2 cups (approximately 200g) of pancake mix. Then, mash the steamed pumpkin and add it to the pancake mix. *If your steamed pumpkin is too watery, don’t add it all at once. Gradually add it while checking the consistency. The amount needed may vary depending on the moisture content of the pumpkin.
Step 3
Put on disposable gloves and gently mix the pumpkin and pancake mix with your hands to form a dough. Do not add any water! Be careful not to make the dough too sticky. If the dough is too wet, add more pancake mix little by little until you reach a workable consistency. The dough should hold its shape when scooped with a spatula or hand.
Step 4
Take small portions (about 2-3 cm) of the dough and roll them into bite-sized balls with your hands. This is a fun step to do with kids! You can shape them however you like, but round shapes are easy to fry evenly.
Step 5
Pour a generous amount of vegetable oil into a deep pot and heat it over medium heat. Once the oil is hot enough (test by dropping a small piece of dough; it should sizzle and float up), carefully add the pumpkin donut balls. While frying, gently roll the donuts with chopsticks or a skewer to ensure they cook evenly on all sides. It’s crucial to maintain medium heat throughout. Frying on high heat can burn the outside while leaving the inside uncooked.
Step 6
Once the donuts are golden brown, remove them from the oil and place them on a paper towel to drain excess oil. Prepare the sugar coating by mixing sugar and, if desired, cinnamon powder on a tray or wide plate. While the donuts are still warm, roll them in the sugar mixture, coating them evenly on all sides. *If you don’t have cinnamon powder, you can omit it, or simply coat them in sugar. If you prefer less sweetness, you can skip the sugar coating altogether. The best part is customizing them to your taste!
