Main Ingredients- 300g Shelled Peas
- 170g Water
- Pinch of Salt (for boiling peas)
Syrup Mixture- 70g Sugar

Step 1
First, prepare 300g of shelled peas. In a pot, combine 170g of water and a pinch of salt (about 1/2 tablespoon). Bring the water to a rolling boil. Once boiling, add the shelled peas and cook for about 10 minutes until they become tender. Adding salt helps to maintain the vibrant green color of the peas.

Once the peas are cooked, drain them through a colander and immediately rinse them under cold running water. This step ensures the peas remain crisp and firm, and helps to cool them down quickly, preventing them from becoming mushy in the next step. Make sure to drain them thoroughly.

Now, let’s get to candying the peas. Prepare a thick-bottomed pan or pot. Add the 70g of sugar and 170g of water to the pan and place it over high heat. As soon as the sugar-water mixture begins to boil, proceed to the next step.

Once the sugar syrup starts boiling, add the boiled and drained peas to the pan. Reduce the heat to medium-low. This is where patience is key! Slowly simmer the peas, stirring occasionally with a spatula to ensure the syrup coats them evenly. Heat control is crucial in candying; cooking too quickly over high heat can dull the peas’ flavor and color. Always reduce the heat to medium-low once the syrup boils and let it simmer gently.
Step 5
The candied peas are almost ready when the syrup has thickened and coats the peas, creating a luscious glaze. You can leave the syrup slightly syrupy according to your preference, but I prefer mine cooked down until almost dry. Continue stirring and cooking until the syrup forms a thick, glossy coating on the peas.
