  • 3 ripe bananas
  • 1 handful of walnuts (approx. 50g)

  • 2 tbsp mayonnaise (30g)
  • 1/2 tbsp sugar (5g)
  • 1 tbsp cinnamon powder (5g)

First, prepare the sweet potatoes. If you have pre-baked sweet potatoes, this step will be quicker. If using raw sweet potatoes, wash them thoroughly, place them in a steamer, and cook for about 20-30 minutes until tender. Once cooked, let them cool slightly, then peel and mash them using a fork or a potato masher until smooth. Add 1/2 cup (100ml) of milk to the mashed sweet potato and mix well until it forms a smooth consistency. You can adjust the amount of milk depending on the moisture content of your sweet potatoes.

Using the prepared sweet potato mixture, shape it to place on top of the bread slices. Take a portion of the sweet potato mixture in your hand and form it into an elongated shape. Carefully place this around the edges of each bread slice, creating a border or a ‘dam’ made of sweet potato. This helps to hold the filling inside when baking, ensuring a neat presentation.
