Sweet and Hearty Sweet Pumpkin Porridge
Baek Jong-won’s Simple Sweet Pumpkin Porridge Recipe: The Perfect Hearty Breakfast, Dinner, or Kids’ Snack!
Let’s make a sweet and creamy sweet pumpkin porridge at home. This recipe is easy to follow and results in a nutritious and satisfying meal.
Main Ingredients
- 1 medium-sized sweet pumpkin
- 3 Tbsp glutinous rice flour
- 500ml water (about 2 cups)
- 1 Tbsp sugar (adjust to taste)
- 1/2 tsp salt (adjust to taste)
Cooking Instructions
Step 1
Let’s make a nutritious and filling sweet pumpkin porridge together!
Step 2
We’ll be peeling the sweet pumpkin before cooking for a smoother texture. First, wash the outside of the pumpkin thoroughly. Then, microwave it for 5 minutes or bake in an air fryer at 180°C (350°F) for about 10 minutes. This will make peeling much easier. Once slightly softened, carefully cut off the stem area in a circle and scoop out all the seeds. Peel the skin and cut the pumpkin into manageable pieces, then mash them until smooth.
Step 3
Place the mashed sweet pumpkin into a pot. Pour in 500ml of water and stir to combine the pumpkin and water well.
Step 4
Measure out 3 tablespoons of glutinous rice flour. Gradually add the flour to the water, stirring continuously to prevent any lumps from forming. It’s important to whisk thoroughly at this stage to ensure the flour dissolves smoothly.
Step 5
Now, let’s season it. Sweet pumpkins are naturally sweet, so you might not need added sugar. However, if you prefer a sweeter taste, add about 1 tablespoon. I’ve added 1 tablespoon of sugar and 1/2 teaspoon of salt to balance the sweetness and flavor.
Step 6
Place the pot over low heat. Stir the porridge constantly to prevent it from sticking to the bottom. As it thickens and gently simmers (‘boiling’), your delicious sweet pumpkin porridge will be almost ready.
Step 7
This vibrant yellow porridge, reminiscent of autumn leaves, is a feast for the eyes! Enjoy this simple sweet pumpkin porridge, made with Baek Jong-won’s tips, as a hearty meal or a satisfying snack!
