  • 30g pumpkin powder (sifted)
  • 70g cooked pumpkin (finely mashed)
  • 240g unsalted butter, softened to room temperature
  • 220g granulated sugar
  • 4 large eggs, room temperature (lightly beaten)
  • 6g baking powder
  • 5g salt
  • 30g milk
  • A little vanilla extract

First, in a mixing bowl, cream the softened butter until smooth. Gradually add the salt and sugar, beating until the mixture is light and fluffy. It’s best to add them in portions to ensure they incorporate well. Then, slowly pour in the beaten eggs, a little at a time, mixing continuously to prevent the batter from separating. Stir in the vanilla extract to enhance flavor and mask any eggy smell.

Re-sift the cake flour and pumpkin powder into the bowl with the butter mixture. Gently fold the dry ingredients into the wet using a spatula until just combined. Be careful not to overmix. Once the dry ingredients are partially incorporated, add the mashed pumpkin and milk. Mix until you have a smooth, cohesive batter. Overmixing can lead to tough muffins, so stop as soon as no dry streaks remain. The batter should be soft and moist.
