Sweet and Savory Braised Semi-Dried Flounder with Radish

I made a soy sauce braised dish using semi-dried flounder that even children can enjoy! It’s a simple yet flavorful dish perfect for any meal.

Ingredients

  • 2 pieces semi-dried flounder
  • 1/2 Korean radish (approx. 300g)
  • 1 stalk green onion

Braising Sauce

  • 4-5 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 4 Tbsp oligosaccharide (or other sweetener)
  • 3 Tbsp cooking sake (mirin or similar)
  • 1 tsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Step 1

First, rinse the semi-dried flounder under running water to clean it. Trim off any fins and internal remnants. Cut the flounder in half to prepare for cooking.

Slice the Korean radish into half-moon shapes, about 1.5 cm thick. Arrange the radish slices in a single layer at the bottom of a pot, ensuring they don’t overlap. This helps the sauce penetrate evenly.

In a small bowl, combine the soy sauce, oyster sauce, oligosaccharide, and cooking sake. Whisk together to create the sweet and savory braising sauce. You can adjust the sweetness to your preference.

Pour half of the prepared braising sauce over the radish in the pot. Add enough water to almost cover the radish. Cover the pot and simmer over medium heat until the radish is tender.

Once the radish is cooked through and has absorbed some of the sauce, carefully remove it from the pot and set aside on a plate. Braising the radish first helps prevent the flounder from breaking apart later.

Add the prepared flounder to the pot containing the braising liquid left from cooking the radish. Stir in the minced garlic, the remaining braising sauce, and the black pepper. Braise over medium heat, spooning some of the sauce over the flounder occasionally as it cooks.

Chop the green onion into large, diagonal pieces. If you enjoy a bit of heat, you can add 1-2 chopped Korean chili peppers at this stage for an extra kick. However, I’ve omitted them today for the children.

When the flounder is almost fully braised, return the pre-cooked radish to the pot. Reduce the heat to low and continue to simmer for about 5 more minutes. Your delicious semi-dried flounder and radish braised in soy sauce is now ready to be enjoyed with a warm bowl of rice!
