Sweet and Savory Busan’s Famous ‘Moon Toast’

Hello everyone! Today, I’m sharing a recipe to easily recreate ‘Moon Toast,’ a famous Busan delicacy, right in your own kitchen! It’s incredibly delicious.
Main Ingredients
- 1 slice of bread
- 1 egg
- 10g carrot (approx. 1/8 carrot)
- 10g green onion (approx. 2cm length)
- 15g onion (approx. 1/8 onion)
- 15g canned corn (approx. 1.5 Tbsp)
- 100g mozzarella cheese
Sauces and Seasonings
- 1 tsp sugar
- 1 Tbsp ketchup
- 1 tsp butter
- 1 Tbsp garlic dipping sauce
- 1 Tbsp honey mustard sauce
- 1 tsp sugar

Cooking Instructions
Step 1
First, melt 1 tsp of butter in a pan. Once the butter is melted, place the slice of bread in the pan and toast it until golden brown over medium-low heat. Be careful not to burn the bread; aim for a crispy texture.
Step 2
Next, prepare the onion, carrot, and green onion. Using a mandoline slicer or a knife, julienne each vegetable very finely. Finely chopped vegetables will mix well with the egg mixture and provide a pleasant texture when cooked.
Step 3
In a bowl, crack 1 egg and whisk it well. Add the finely julienned onion, carrot, green onion, and drained canned corn to the whisked egg. Mix everything thoroughly until well combined.
Step 4
Lightly grease a pan with oil over medium-low heat. Ladle about half of the egg mixture into the pan and cook until golden brown on both sides. Flip carefully to ensure even cooking. Avoid high heat to prevent burning.
Step 5
On the toasted bread, sprinkle sugar evenly. Then, place the cooked egg pancake on top. Drizzle ketchup, honey mustard sauce, and garlic dipping sauce artistically over the egg. Finally, generously top with mozzarella cheese to complete your delicious Moon Toast!
