  • 6 mini gara tteok (rice cakes, approx. 150g)
  • 2 swirls of perilla oil (approx. 2 Tbsp)

First, prepare the mini rice cakes. Cut them into 3 equal pieces each, making them easy to eat. If they’re too small, they might break while frying, and if they’re too large, the sauce won’t coat them well, so cutting them into thirds is ideal.

Now it’s time to cook the rice cakes. Heat 2 swirls (about 2 Tbsp) of perilla oil in a frying pan over medium-low heat. Perilla oil adds a nutty aroma that enhances the flavor of the tteokgangjeong.

Add the cut rice cakes to the preheated pan. Roll them around and fry until they are golden brown and slightly crispy. It’s important to fry them slowly until the surface becomes lightly crisp and develops an appetizing golden color. Once fried, set the rice cakes aside on a separate plate.

With the heat completely turned off in the pan used for frying the rice cakes, add 1/2 Tbsp soy sauce, 2 swirls (about 2 Tbsp) of corn syrup, and 1/2 Tbsp ginger syrup. (If you don’t have ginger syrup, you can omit it or use honey as a substitute.) Let the sauce simmer gently using the residual heat, stirring to combine the ingredients. This prevents the sauce from burning and creates a smooth sauce.

With the heat still off, return the pre-fried rice cakes to the pan. Toss them well by shaking the pan or gently stirring with a spatula until the sauce evenly coats each piece. The rice cakes will start to glisten with the sauce coating.

Finally, turn the heat back on to low and stir for about 10 more seconds to finish. This will slightly reduce the sauce, coating the rice cakes perfectly and completing your delicious tteokgangjeong.
