Cooking Instructions
Step 1
Prepare the star ingredients: fresh pollock roe from Busan’s premium seafood brand, Deokwha Food, silken tofu, and pancake mix. Having all your ingredients measured and ready will make the cooking process much smoother.
Step 2
In a large bowl, place the silken tofu and mash it thoroughly with a spoon or fork until it’s smooth and lump-free. This ensures the batter mixes evenly without clumping.
Step 3
Add the pancake mix to the mashed tofu and stir just until no dry powder is visible. Be careful not to overmix, as this can make the batter tough.
Step 4
Carefully make a slit in the pollock roe sac, scrape out only the roe (the eggs), and add it to the batter. Mix well until the roe is evenly distributed throughout the batter. It’s important that the roe is spread throughout.
Step 5
Transfer the prepared batter into a piping bag fitted with a nozzle. Using a piping bag makes it easy to create uniform churro ball shapes and pipe them directly into the hot oil.
Step 6
Heat a generous amount of vegetable oil in a pot to 190°C (375°F). Slowly pipe the batter into the hot oil, cutting it off with scissors to create bite-sized churro balls.
Step 7
Using scissors to cut the batter as you pipe it makes it much easier to achieve consistent churro ball shapes. You can also use chopsticks to help guide and shape the dough as it fries.
Step 8
Once the pollock roe churro balls are golden brown and crispy, remove them from the oil and briefly drain on paper towels. While they are still hot, transfer them to a serving dish and sprinkle evenly with 1 tablespoon of sugar, tossing to coat. Your delicious sweet and savory Pollock Roe & Tofu Churro Balls are ready!
