A Delicious Pork Bulgogi Recipe with Juicy Meat
This recipe uses pork neck for a delightful Bulgogi. The marinade is versatile and can be used in many other dishes.

Step 1
First, prepare 250g of pork neck. Fresh cuts will yield the best flavor for Bulgogi. Slicing it to about 1cm thickness will help the marinade penetrate well and cook evenly.

In a bowl, combine the prepared pork neck with 1 Tbsp of brown sugar. Gently toss to coat the meat. Let it marinate for about 10 minutes. The sugar not only adds sweetness but also helps tenderize the meat by drawing out moisture.

Wash the half stalk of green onion, pat it dry, and then slice it diagonally at an angle, about 0.5cm thick. The fragrant aroma of the green onion will complement the pork, adding another layer of deliciousness.

To the pork that has marinated with brown sugar for 10 minutes, add the remaining marinade ingredients: 1 Tbsp mirin, 1 Tbsp grated onion, 3 Tbsp soy sauce, 0.5 Tbsp fish sauce, 1 Tbsp oligodang, 0.5 Tbsp minced garlic, and a pinch of black pepper. Mix everything thoroughly with your hands. For best results, let it marinate for at least 15 more minutes to allow the flavors to fully absorb into the meat.

Now, let’s start cooking. Heat a pan over high heat and add about 1 Tbsp of cooking oil. Add all the sliced green onions and stir-fry for about 30 seconds to 1 minute until fragrant. This step creates ‘green onion oil,’ which significantly enhances the overall flavor of the Bulgogi.
Step 6
Once the green onions are fragrant, add all the marinated pork to the pan. Begin by stir-frying over high heat. As the pork starts to cook and change color, reduce the heat to medium. Continue to stir and cook the pork, ensuring it’s cooked through and glistening with its own juices. Once it’s nicely caramelized and cooked, remove from heat to serve.
