After all, meat is always a great choice! While we usually make spicy Jeyuk Bokkeum (spicy stir-fried pork), today we’re trying something special: a non-spicy, sweet, and savory Soy Sauce Pork Bulgogi. I’ll share with you my detailed method for making a delicious soy sauce marinade from scratch, without needing to buy pre-made sauces! Get ready to make a dish that will disappear in no time.

Main Ingredients

  • 500g Pork Shoulder (thinly sliced for bulgogi recommended)
  • 1/2 Onion
  • A bit of Green Onion
  • 1 Enoki Mushroom
  • 1 Cheongyang Pepper (optional)
  • A drizzle of Sesame Oil
  • A sprinkle of Sesame Seeds
  • A pinch of Black Pepper

Soy Sauce Marinade

  • 4 Tbsp Soy Sauce
  • 3 Tbsp Sugar
  • 2 Tbsp Cooking Wine (Mirin or similar)
  • 2 Tbsp Oyster Sauce
  • 1 Tbsp Minced Garlic
  • 8 Tbsp Water

Cooking Instructions

Step 1

First, prepare the ingredients. Trim the base of the enoki mushrooms and rinse them thoroughly. Thinly slice half an onion into strips. Chop the green onion into bite-sized pieces. Pat the pork shoulder dry with paper towels to remove any excess blood. This helps to reduce any gamey odor and allows the marinade to penetrate better.

The key to delicious Soy Sauce Pork Bulgogi is the marinade! Combine 4 tablespoons of soy sauce, 3 tablespoons of sugar, 2 tablespoons of cooking wine, 2 tablespoons of oyster sauce, 1 tablespoon of minced garlic, and 8 tablespoons of water in a bowl. This is the golden ratio for sweetness, saltiness, and umami.

Place the prepared pork shoulder into the bowl with the marinade. Gently mix with your hands, ensuring that every piece of pork is well-coated with the sauce.

Let the marinated pork sit for about 30 minutes. If you have time, refrigerating it for an hour will develop even deeper flavors. While you can stir-fry it immediately, marinating makes the meat much more tender and flavorful.

(Tip: You can also add the onion and green onion to the marinade while the pork is resting. Feel free to adjust this step to your preference!)

Since we are using thinly sliced bulgogi-cut pork shoulder, it cooks very quickly. It’s important to keep stirring to prevent the meat from clumping together as it cooks.

To prevent the meat from burning, maintain a medium-high heat and continuously stir-fry. Stirring helps it cook evenly and develop a delicious color.

When the pork and vegetables are almost fully cooked, add the prepared enoki mushrooms. Stir-fry for just a little longer. Enoki mushrooms release a lot of water if overcooked, so cook them just until they are slightly wilted.
