A Delicious Twist on Tuna Potato Stew: Introducing Our Sweet Potato Version!
Don’t have potatoes on hand? No problem! This recipe uses sweet potatoes instead, making it even sweeter and more delicious. Sweet potatoes are naturally sweet, and when combined with savory tuna and a flavorful sauce, it creates an irresistible dish that’s perfect as a side for rice.
Main Ingredients- 4 small sweet potatoes
- 1 can of tuna (drained)
- 2 Korean chili peppers (cheongyang peppers, adjust to spice preference)
Seasoning- 2 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp soy sauce
- 1/2 Tbsp sugar (adjust to taste)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, peel the sweet potatoes and cut them into bite-sized cubes. Place the cubed sweet potatoes in a pot or deep pan. Add just enough water to cover the sweet potatoes. Bring to a boil over high heat.
Step 2
While the sweet potatoes are boiling, mix all the seasoning ingredients together in a small bowl: red pepper flakes, soy sauce, sugar, and minced garlic. Having the seasoning pre-mixed makes the cooking process much smoother.
Step 3
Once the sweet potatoes start boiling, add the prepared seasoning mixture to the pot and stir well to dissolve the seasonings into the water. Give it a gentle stir to ensure the sauce is distributed evenly.
Step 4
Drain most of the oil from the canned tuna. Be careful not to drain it completely, as a little oil adds flavor and moisture. Add the drained tuna to the pot with the sweet potatoes and continue to simmer.
Step 5
Finally, add the chopped Korean chili peppers. Let the stew simmer over medium-low heat, stirring occasionally to prevent sticking, until the sauce has thickened and coats the ingredients. Continue cooking until the sweet potatoes are tender and have absorbed the flavors. Your delicious Tuna and Sweet Potato Stew is ready! It’s wonderful served over hot rice.
