Apples are a staple in our house because my daughters love them and they’re so good for you. I often buy them in bulk to make dried apple snacks for the kids. But did you know you can also make a side dish with dried apples?! Today, I’ve made ‘Apple Jangajji,’ a sweet and tangy side dish perfect for any meal! Let’s get started on this delightful pickled apple recipe.

Main Ingredients

  • Dried apple slices (from 4 apples)

Seasoning Ingredients

  • 2 Tbsp Gochugaru (Korean red pepper flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Corn syrup or Oligosaccharide
  • 1 Tbsp Fish sauce
  • 1/2 Tbsp Minced garlic
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare 4 fresh apples. To ensure they are safe to eat with the peel on, soak them in water with a little vinegar for about 10 minutes. Then, rinse them thoroughly under running water. Pat the apples dry completely. Remove the core and slice the apples into about 0.5cm thick rounds. Place the sliced apples in a food dehydrator and dry them at 70°C (158°F) for 6 hours to create dried apple slices.

Be careful not to dry the apple slices too much. If they become too brittle, gently rinse them under cold water to rehydrate them slightly until they are chewy and pliable. After rinsing, squeeze out excess water thoroughly with your hands. The key is to have the dried apple slices rehydrated to a soft, chewy texture so they can absorb the seasoning well.

Now, let’s make the delicious seasoning! In a bowl, combine 2 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp corn syrup, 1 Tbsp fish sauce, and 1/2 Tbsp minced garlic. Mix these ingredients well until evenly combined. Once the seasoning is ready, add the squeezed dried apple slices to the bowl. Gently toss and mix them with your hands to ensure the seasoning coats every piece of apple evenly. Finally, sprinkle a pinch of sesame seeds for a nutty aroma. Your sweet and tangy Apple Jangajji is ready to enjoy! You can eat it right away or store it in the refrigerator as a delightful side dish.
