Ingredients for Jarred Preserves

  • 1kg fresh apricots
  • 2 cups granulated sugar (approx. 300g)
  • 4 cups water (approx. 800ml)

First, let’s make the basic sugar syrup for the preserves. In a pot, combine 4 cups of water and 2 cups of granulated sugar. Bring to a simmer over medium heat. Stir with a spatula until the sugar is completely dissolved. Once dissolved, let it simmer for another 1-2 minutes to slightly thicken the syrup.

Next, it’s time to prepare the apricots. Wash 1kg of fresh apricots thoroughly under running water. Remove the stems, then halve the apricots and remove the pits. Peel the skin off the prepared apricots. Peeling them makes the texture softer and allows the syrup to penetrate better, resulting in a more delicious flavor. Arrange the peeled apricots neatly in a sterilized glass jar, ensuring they don’t overlap too much.

Pour the warm sugar syrup you made earlier into the jar filled with apricots, ensuring the apricots are fully submerged. Leave a little space at the top of the jar. Be careful as the syrup is hot. Submerging all the apricots in syrup is crucial to prevent spoilage and ensure they last longer.

Once the jar is tightly sealed, allow the apricot preserves to cool completely at room temperature before refrigerating. Properly refrigerated, they can be enjoyed for about 2 weeks to a month. Enjoy the chilled apricot preserves as is, or mix them with sparkling water to create a refreshing apricot ade. They also make a lovely topping for toast or yogurt.
