Summer Delight: Homemade Cherry Tomato Marinade Recipe for Pickled Tomatoes
A refreshing tomato marinade perfect for hot summer days. This dish combines fresh cherry tomatoes with a fragrant marinade for a delightful pickled tomato treat. It’s easy to make and wonderful for parties or as a side dish.
Main Ingredients- 500g of Kalra cherry tomatoes (choose firm, fresh ones)
- 1/4 medium onion (small size)
Refreshing Marinade Sauce- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar (adds depth of flavor)
- 2 Tbsp honey (adjust sweetness to your preference)
- 2 Tbsp lemon juice (for freshness)
- A pinch of dried parsley flakes
- A pinch of salt (to taste)
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar (adds depth of flavor)
- 2 Tbsp honey (adjust sweetness to your preference)
- 2 Tbsp lemon juice (for freshness)
- A pinch of dried parsley flakes
- A pinch of salt (to taste)
Cooking Instructions
Step 1
First, peel the onion, wash it thoroughly, and then slice it thinly or mince it finely. Place the sliced onion in cold water for at least 5 minutes to mellow out its sharp, pungent flavor. Drain the onion well after soaking and pat it dry. This step is key to achieving a clean taste in your marinade.
Step 2
Next, rinse the Kalra cherry tomatoes under running water. Remove the stems and, at the stem end of each tomato, make a small cross-shaped incision with a toothpick or the tip of a knife. This little cut will make peeling the skin much easier.
Step 3
Bring a pot of water to a rolling boil. Once boiling, carefully add the cherry tomatoes with the incisions and blanch them for about 1 to 2 minutes, just until their skins start to loosen. Immediately transfer the tomatoes to an ice bath (a bowl of cold water with ice). This rapid cooling helps the skins peel off effortlessly and keeps the tomatoes firm and fresh.
Step 4
If you don’t have an ice bath, simply submerging them in cold tap water after blanching is also effective. The crucial part is the quick transition from hot to cold to prevent the tomatoes from becoming mushy and to maintain their crisp texture.
Step 5
In a mixing bowl, combine the peeled cherry tomatoes and the well-drained, sliced onion. Now, it’s time to prepare the delicious marinade. Add 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 2 tablespoons of honey, and 2 tablespoons of fresh lemon juice to the bowl. Sprinkle in a pinch of dried parsley flakes and salt. Gently mix everything together with a spatula until well combined.
Step 6
Toss the tomatoes and onion gently to ensure they are evenly coated with the marinade. Taste the mixture and adjust the seasoning by adding more honey, lemon juice, or salt according to your preference. Transfer the finished cherry tomato marinade to a clean airtight glass container and store it in the refrigerator. It can be kept fresh for about a week, and the flavors will continue to deepen over time. Enjoy this refreshing treat chilled!
