Sweet and Tender Apple Curry

Don’t throw away those sad, overripe apples in your fridge anymore! Chef Choi In-young’s special recipe from Altoran transforms hard or less-sweet apples into incredibly soft and sweet curry. The natural sweetness and fruity aroma of apples blend perfectly for a flavorful curry the whole family will enjoy. This recipe creates a smooth, easy-to-swallow curry that even picky eaters will love.
Curry Ingredients- 1 overripe or less-sweet apple (adjust size as needed)
- 200g pork (for curry or stir-fry)
- 2/3 zucchini
- 1.5 carrots
- 1.5 potatoes
- 1 onion
- 3.5 Tbsp minced garlic
- 5 Tbsp olive oil
- 1 tsp salt (for pork seasoning)
- 1 tsp black pepper (for pork seasoning)
- 1 cup curry powder (approx. 100-120g)
- 5 cups cold water (1L)
- 5 Tbsp soy sauce
- Parsley flakes (for garnish)
- Favorite vegetables for toppings (optional)
- Warm white rice
Cooking Instructions
Step 1
First, thoroughly wash all the vegetables (zucchini, carrots, potatoes, onion) and the apple. Dice the carrots, potatoes, onion, and apple into approximately 1.5cm cubes. Slice the zucchini into similar-sized pieces. You can leave the skin on the apple after removing the core.
Step 2
Cut the pork into bite-sized pieces. Heat 2 tablespoons of olive oil in a pot or deep pan over medium heat. Add the pork and stir-fry until the surfaces are lightly browned. Then, reduce the heat to low. Add the minced garlic, salt, and black pepper to the pork, seasoning it while also removing any gamey odors. Adding garlic at the very beginning can cause it to burn, so it’s best to add it after the pork has started to cook.
Step 3
To the pot with the cooked pork, add the diced vegetables (zucchini, carrots, potatoes, onion), apple, and soy sauce. Stir-fry everything together for about 3-5 minutes until the vegetables are slightly softened. Stir-frying the ingredients beforehand deepens their flavor and adds richness.
Step 4
Remove the stir-fried vegetables and pork from the pot and set aside to cool. Some of these ingredients will be blended, and some will be added later to maintain texture.
Step 5
Now, let’s create the signature smooth texture of the curry. In a blender, combine half of the cooled stir-fried ingredients (apple, onion, potatoes, etc.), 2 cups (400ml) of cold water, and 1 packet (about 100g) of curry powder. Blend until smooth. This process results in a curry with a smooth, soup-like consistency that even children will enjoy. The blended apple and vegetables add natural sweetness and flavor, significantly enhancing the curry’s overall deliciousness and aroma.
Step 6
Pour the blended curry paste and the remaining 3 cups (600ml) of water into the pot. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 3 minutes to thicken the curry. As the curry thickens, turn off the heat temporarily. Add half of the reserved stir-fried ingredients (pork, large vegetable pieces). Then, add some more of the remaining stir-fried ingredients and gently mix. Turn the heat back on and cook for just another 1-2 minutes. Avoid overcooking the vegetables, as this can make them mushy. It’s important to retain some crispness.
Step 7
Serve a generous portion of warm white rice in a bowl. Ladle the prepared apple curry over the rice. Mix well and get ready to enjoy.
Step 8
Finally, sprinkle some parsley flakes over the curry for a beautiful presentation and an added aromatic touch. Your delicious apple curry is now complete. Feel free to add extra stir-fried vegetables or other toppings as desired.
