  • 1/4 head well-fermented kimchi (aged kimchi)
  • A little cooking oil or butter (for stir-frying kimchi)
  • Plenty of mozzarella cheese (to taste)

Bulgogi Marinade Ingredients

  • 100g thinly sliced beef (for bulgogi)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp oligosaccharide or corn syrup
  • A little minced garlic (approx. 1/2 tsp)
  • A little basil (approx. 1/4 tsp dried, or fresh chopped)
  • A little black pepper

First, let’s marinate the bulgogi. In a bowl, combine the thinly sliced beef with 1 Tbsp soy sauce, 1/2 Tbsp oligosaccharide, 1/2 tsp minced garlic, a pinch of dried basil, and a little black pepper. Mix well with your hands and let it marinate for about 10 minutes.

Next, prepare the sweet potatoes. Peel the 2 boiled sweet potatoes and mash them thoroughly while they are still warm using a fork or a potato masher. Once mashed, mix in 1/2 Tbsp honey, a pinch of salt, and 2 Tbsp plain yogurt until you have a smooth and creamy sweet potato mash. For the aged kimchi, remove the tough inner core, rinse it lightly under running water to adjust the spiciness and sourness. Squeeze out any excess water and chop it into bite-sized pieces. Heat a little cooking oil or butter in a pan, add the chopped kimchi, and stir-fry. To balance the sourness and add a touch of sweetness, add about 1/2 Tbsp of honey and stir-fry together.
