Muffin Batter Ingredients

  • 100g softened butter, at room temperature
  • 100g cake flour
  • 80g granulated sugar
  • 4g baking powder
  • 2 eggs, at room temperature
  • 50g canned chestnut filling
  • 20g milk

Cooking Instructions

First, place the softened butter (100g) in a bowl. Using a hand mixer or whisk, whip it until it becomes pale and creamy. Then, gradually add the granulated sugar (80g) in 2-3 additions, continuing to whip until the sugar dissolves and the mixture is smooth and light ivory in color.

Prepare the eggs (2). Make sure they have been at room temperature for at least 30 minutes. Crack the eggs into a separate bowl and lightly whisk them. Add the whisked eggs to the butter-sugar mixture in 2-3 stages, whipping well after each addition until the mixture is light and voluminous. Adding the eggs all at once can cause the mixture to separate, so patience is key.

Sift the cake flour (100g) and baking powder (4g) together through a fine-mesh sieve at least 2-3 times. Add the sifted dry ingredients to the wet ingredients. Using a spatula, gently fold the dry ingredients into the wet ingredients by cutting through the mixture and bringing it up from the bottom. Mix just until a few streaks of flour remain; do not overmix.

Once the dry ingredients are slightly visible, add the drained canned chestnut filling (50g) and milk (20g). Gently fold these ingredients into the batter with the spatula until just combined. Overmixing at this stage can lead to tough muffins, so mix only until no dry streaks are visible.

Spoon the muffin batter into prepared muffin liners, filling them about 70-80% full. Decorate the tops with a few pieces of chestnut filling and a sprinkle of sliced almonds. Bake in a preheated oven at 180°C (350°F) for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the muffins from the oven and let them cool completely on a wire rack before enjoying.
