Ingredients

  • Canned corn kernels, drained: 280g
  • All-purpose flour: 4 Tbsp
  • Cornstarch: 2 Tbsp
  • Salt: 1 pinch
  • Vegetable oil: 2 Tbsp (for frying)

First, drain the canned corn thoroughly using a sieve. Set aside the drained liquid; we’ll use it later for the batter.

In a blender, combine 220g of the drained canned corn kernels with the reserved corn liquid (4 Tbsp). Blend until you have a smooth paste.

Transfer the blended corn paste to a mixing bowl. Add the remaining whole corn kernels (about 60g), all-purpose flour (4 Tbsp), cornstarch (2 Tbsp), and a pinch of salt. Mix everything together well until you have a cohesive batter. Adjust consistency if needed to ensure it’s not too runny or too stiff.

Heat vegetable oil (2 Tbsp) in a frying pan over medium heat. Use a spoon to scoop portions of the corn batter and carefully drop them into the hot oil, shaping them into small rounds. Avoid making the fritters too thick so they cook evenly.
