Ingredients- 10 dried persimmons (semi-dried variety recommended)
- 1 handful of walnuts (approx. 50g)

Step 1
Let’s start by understanding dried persimmons. They are made by peeling and drying persimmons that have been carefully cultivated. After 40 days, they become semi-dried (bansigam), and after 60 days, they are fully dried (geonsigam) before being shipped. The semi-dried persimmons I received were incredibly sweet and delicious; I actually ate five of them right after receiving them!
Step 2
However, we can’t miss out on making dried persimmon and walnut rolls, one of the most delicious ways to enjoy dried persimmons! Take the walnuts from your freezer and blanch them in boiling water for about 1 minute. This step helps to remove any astringency and makes the walnuts softer.
Step 3
After blanching, drain the walnuts well. Then, place them in a dry pan over low heat and toast for 2-3 minutes, stirring occasionally. Toasting the walnuts helps to dry them out and enhances their nutty flavor and crunchy texture.
Step 4
Now, prepare 10 dried persimmons and the toasted walnuts for making these delicious dried persimmon and walnut rolls.
Step 5
Remove the tough stem from each dried persimmon. Carefully make a slit down the center of each persimmon and open it up. If there are any seeds, remove them. Lay a piece of plastic wrap on your work surface and place the opened persimmon on top. Generously fill the center of the persimmon with the prepared toasted walnuts.
Step 6
If you try to slice the roll immediately after shaping, especially with semi-dried persimmons, the shape might become messy. To achieve neat slices, wrap the persimmon roll tightly with the plastic wrap and place it in the freezer for about 30 minutes until slightly firm. Once firm, take it out and slice it into 1cm thick pieces. This freezing step ensures clean, beautiful cuts.

Arrange the beautifully sliced dried persimmon and walnut rolls on a serving plate. For an even more impressive presentation, you can also add some plain semi-dried persimmons alongside. This dish is sure to impress your guests!
