Transform any leftover sweet pumpkin into a unique and delicious dish! This recipe offers a subtle sweetness and a satisfyingly chewy texture that appeals to all ages. Perfect as a snack for kids or a delightful accompaniment to makgeolli (Korean rice wine) for adults.
Sweet Pumpkin Pancake Ingredients- 1/2 small sweet pumpkin (approx. 300-400g)
- 5 Tbsp pancake mix (or rice flour, wheat flour)
- Plenty of cooking oil
- 1 tsp salt (adjust to taste)

Step 1
Let’s start making delicious sweet pumpkin pancakes! First, wash and prepare half a small sweet pumpkin. Cut it into large, bite-sized pieces. Steam the pumpkin pieces in a steamer until they are tender enough to easily peel the skin off. Steaming for about 10-15 minutes should be sufficient. Once steamed, let it cool slightly, then peel off the skin, which should come off easily.
Step 2
Now, it’s time to turn the steamed pumpkin into a smooth batter. Place the peeled steamed pumpkin into a blender. Add water very gradually, only as needed, until the pumpkin is smoothly pureed. Blend until there are no large lumps remaining, achieving a smooth consistency.

Transfer the pureed sweet pumpkin to a mixing bowl. Add 5 tablespoons of pancake mix. For that classic Korean touch, add 1 teaspoon of salt. (Tip: Adjust the amount of salt based on the natural sweetness of your pumpkin.)

Using a spatula or spoon, stir the pancake mix and salt into the pumpkin puree until well combined. The key is to achieve the right consistency: not too runny, not too thick. It should spread well in the pan and hold its shape. You may need to add more or less pancake mix depending on the moisture content of your pumpkin.

Now for the satisfying part – frying the pancakes! Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is shimmering, ladle portions of the batter onto the pan. Aim for round shapes of your desired size.
Step 6
Patience is a virtue here! Once the bottom of the pancake is golden brown, carefully flip it using a spatula. Cook the other side until it’s also golden brown.
