Ingredients- 1 can (340g) canned corn, drained
- 7-8 Tbsp all-purpose flour or pancake mix (adjust for batter consistency)
- About 1/2 cup cold water (adjust for batter consistency)
- Generous amount of cooking oil for frying
Cooking Instructions
Step 1
First, gather and prepare all the ingredients for your corn fritters. Have your drained canned corn ready, and measure out the flour and water. Having everything prepped will make the cooking process much smoother.
Step 2
Drain the canned corn thoroughly using a sieve. It’s important to remove as much liquid as possible to preserve the natural sweetness of the corn. You can also gently press the corn with paper towels to remove excess moisture.
Step 3
In a bowl, combine the drained corn with the flour (or pancake mix) and cold water to create the batter. Gently mix the ingredients so you don’t mash the corn kernels. The batter should have a consistency slightly thicker than pancake batter – not too stiff and not too runny. Adjust the amount of flour or water as needed to achieve the desired consistency after adding the corn.
Step 4
Heat a generous amount of cooking oil in a non-stick pan over medium-low heat. Spoon portions of the batter into the pan to form fritters of your desired size. You can make one large fritter or several smaller ones. Once the edges begin to look golden brown and set, carefully flip the fritters.
