Cooking Instructions
Step 1
Let’s start making your delicious and crispy dalgona! In a frying pan, combine 100g of sugar and 30ml of water. Heat over low heat and stir until the sugar completely dissolves. Crucially, do not stir before the sugar has fully melted; this prevents crystallization and ensures even cooking.
Step 2
As the sugar melts and begins to turn a light brown color, immediately turn off the heat. Quickly add 2g of baking soda and stir vigorously with a chopstick. The mixture will rapidly puff up, creating a beautifully caramel-colored dalgona! This is the most dramatic and satisfying part of making dalgona.
Step 3
Carefully pour the hot, fluffy dalgona onto a tray lined with parchment paper. Let it cool and harden at room temperature for about 20 minutes until you have a sweet and crunchy dalgona candy.
Step 4
Once the dalgona has hardened, place it in a zip-top bag. Use a spatula or rolling pin to break it into desired pieces. Slightly larger chunks are great for topping your latte, offering a pleasant chew. Store these crushed dalgona pieces in an airtight container or bag in the freezer. This way, you can easily grab some whenever you fancy a dalgona latte, making preparation a breeze.
Step 5
Now, let’s assemble your refreshing iced latte! Fill a clear glass with plenty of ice cubes. The more ice, the colder and more enjoyable your latte will be.
Step 6
Pour your strong instant coffee or the prepared 2 shots of espresso slowly over the ice. The deep, rich aroma of the coffee will enhance the overall flavor of your latte.
Step 7
Finally, generously sprinkle your homemade crispy dalgona over the top of the latte! Enjoy the fantastic combination of sweet dalgona, coffee, and milk. Give it a gentle stir with a stick to combine. This method is even more delicious and satisfying than the traditional ‘1000-stir’ dalgona coffee, offering a richer flavor profile. It’s absolutely perfect for enjoying as a cool iced latte on warm days!
