Let’s turn those frozen bananas you’ve been storing away into sweet and fragrant cookies! This is an incredibly simple egg-free recipe perfect for your air fryer.
Ingredients- 1 frozen banana
- 80g all-purpose flour (or cake flour)
- 60g unsalted butter
- 30g sugar
- 5 Tbsp milk
- 1 pinch vanilla powder
- 1 pinch salt
- Chocolate chips or crumbs, as needed

Step 1
First, take the frozen banana out of the freezer and let it sit at room temperature for a little while until the intense coldness dissipates. Be careful not to let it thaw completely, as this can make the dough too wet.

When you’re preparing to sift the flour, add a pinch of salt to it. This helps to balance the overall flavor of the cookies.
Step 3
In a bowl, cream the softened room-temperature butter with the sugar. Mix until just combined; the sugar doesn’t need to dissolve completely. Avoid over-creaming, as we don’t want to incorporate too much air. A smooth, consistent mixture is perfect.

Sift the flour, vanilla powder, and salt into the butter mixture. Gently mix until just combined and no dry flour is visible. Don’t overmix.
Step 5
Add the milk to the dough and mix. Add the milk one tablespoon at a time, adjusting the amount based on the dough’s consistency. You’re looking for a soft, spreadable dough that’s neither too sticky nor too stiff. At this stage, you can also mix in chocolate chips or crumbs for extra flavor. Place the finished dough onto a sheet of parchment paper.

Cover the dough with another sheet of parchment paper. Gently press down with your hands, then use a rolling pin to roll the dough to your desired thickness, about 0.5 to 1 cm (approximately 0.2 to 0.4 inches).

Shape the dough into a long rectangle using the rolling pin. You can adjust the overall size based on the length of your banana.

Place the slightly thawed banana on top of the rolled dough. Gently press the dough around the banana to enclose it, ensuring the banana is well-covered within the dough.

Carefully lift the dough with the parchment paper and gently roll it to form a uniform cylinder, enclosing the banana. Place this log in the refrigerator or freezer for about 10-15 minutes to allow the butter to firm up slightly. This step is crucial for preventing the cookies from losing their shape when sliced.

Once the dough has firmed up, slice it into cookies about 1 cm (0.4 inches) thick. As you slice, gently pinch the edges to ensure the banana stays enclosed and the cookie maintains its shape.
