  • 2 Carrots
  • 2 Tbsp Muscovado sugar (or dark brown sugar)
  • 1/2 tsp Ground cinnamon
  • 1 Tbsp Cooking oil
  • 1/4 cup Water
  • Pinch of salt

Begin by thoroughly washing and peeling the carrots. Slice them into uniform, round pieces about 1 cm thick. You can opt for slightly thicker slices if you prefer a bit more bite.

Heat the cooking oil in a pan over medium-low heat. Add the sliced carrots and sauté for 2-3 minutes, stirring gently to prevent sticking. The goal is to lightly coat the carrots with oil until they become slightly translucent.

Once the carrots are coated in oil, add 1/4 cup of water, 2 tablespoons of Muscovado sugar, 1/2 teaspoon of ground cinnamon, and a pinch of salt. Stir everything together well. Reduce the heat to low, cover the pan, and let the carrots simmer gently for 10-15 minutes, or until they are tender and the liquid has reduced to a syrupy glaze. Stir occasionally to ensure even cooking and prevent burning. Continue simmering until a beautiful glossy glaze forms.
