Sweet & Hearty Sweet Potato Beef Curry
Clean Out Your Fridge! Delicious Sweet Potato Beef Curry Using Leftover Ingredients
Enjoy a satisfying curry without the need for multiple side dishes. Today, we’re making a ‘fridge-cleaning’ meal! Featuring sweet potatoes as the star, we’ve added beets, onions, and delicious beef to create a rich and flavorful curry in a flash. This dish is perfect as a snack for kids or a hearty dinner.
Ingredients- 3 medium sweet potatoes
- 120g beef (for bulgogi or stew)
- 1 medium onion
- 2/3 medium beet
- 4 curry blocks (or 80-100g curry powder)
Cooking Instructions
Step 1
Prepare your onion. If it’s starting to spoil from the inside, simply trim away any damaged parts. You’ll need about 1 medium onion’s worth. Heat 2 tablespoons of avocado oil (or other cooking oil) in a pot over medium-low heat and sauté the onion until it becomes translucent. Sautéing the onions thoroughly will bring out their sweetness, making the curry even more delicious.
Step 2
Once the onion is translucent and tender, cut the beef into bite-sized pieces, similar in size to the onion, and add it to the pot. Stir-fry until the beef is browned on the outside. Cooking over high heat quickly will help seal in the juices.
Step 3
Now it’s time to add the sweet potatoes, the star of our curry, and the beet for a beautiful color. Peel and dice the sweet potatoes and beet into pieces roughly the same size as the beef. Add them to the pot and stir gently to combine with the other ingredients. Sauté together for 1-2 minutes to allow the flavors to meld.
Step 4
Once all ingredients are lightly sautéed, add enough water to cover them completely. The amount of water can be adjusted based on your desired curry consistency, but generally, 2 to 3 times the volume of the ingredients is a good starting point. Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low.
Step 5
Simmer for about 10-15 minutes, or until the sweet potatoes and beets are tender. You should be able to easily pierce them with a fork. Once the vegetables are cooked, add the curry blocks and stir well to dissolve them completely. Ensure there are no lumps by stirring continuously with chopsticks or a spatula. Once the curry thickens to your liking, simmer for another minute or two before turning off the heat. Enjoy your delicious, beautifully colored curry, thanks to the beets!
