While mini kabocha squash is delicious even when simply steamed, today we’re going to elevate its flavor by transforming it into a delightful ‘Mini Kabocha Squash Pizza’! This recipe is a fantastic option for children’s snacks and a healthy choice for those on a diet.

- 5g Butter
- Tomato Sauce (as needed)
- Bacon (as needed)
- Onion (as needed)
- Pizza Cheese (as needed)
- Canned Corn (optional)
- Mushrooms (optional)
Cooking Instructions
Step 1
First, since we’ll be eating the skin of the mini kabocha squash, pay extra attention to thorough cleaning. I used plenty of baking soda to scrub it clean, then soaked it briefly in water with a drop of vinegar for sanitization.
Step 2
Place the thoroughly washed kabocha squash in a microwave-safe dish and microwave for about 5 minutes. We need to cut off the top for the pizza, and raw kabocha is quite hard to cut. Pre-cooking it slightly makes this step much easier.

While the kabocha is in the microwave, prepare the ingredients for the pizza. Start by finely dicing the onion. For a child-friendly texture, dicing it as finely as possible is recommended.

Next, chop the bacon into small pieces, about 1cm in width. Cutting the bacon to a consistent thickness will result in a better texture when cooked.

Prepare about 5g of butter and cut it into two or three small pieces for easy use. The butter will melt and add richness to the flavor.

Prepare an appropriate amount of tomato sauce according to your preference. I used ‘Fontana Tomato Sauce’ for its rich flavor, but any kind of tomato sauce will work. Using a store-bought sauce makes the process even more convenient.

Carefully remove the kabocha squash from the microwave after 5 minutes and let it cool slightly. Then, slice off the top about 2cm thick, creating a lid.

Set the lid aside. Use a spoon to scoop out the seeds and pulp from the inside of the squash, cleaning it out to create space for the filling. This process is quite similar to making kabocha squash egg nests.

Now it’s time to fill the kabocha squash. First, spread a moderate amount of tomato sauce inside the hollowed squash, being careful not to let it touch the edges.

Sprinkle the diced onion evenly over the tomato sauce. The onion will add sweetness as it cooks.

Gently mix the tomato sauce and onion together inside the squash. Be careful not to mix too vigorously, as this could mush the kabocha flesh.

Arrange the chopped bacon pieces on top of the tomato sauce and onion mixture. The savory taste of the bacon will enhance the overall flavor of the pizza.

At this stage, you can add optional ingredients like mushrooms, corn, or finely chopped bell peppers for a more varied taste. Finish by drizzling a little more tomato sauce over the toppings, if desired.

Finally, generously cover the top with pizza cheese, the crowning glory of this kabocha pizza! Place the prepared pizza in an air fryer set to 190°C (375°F) for about 12 minutes, or until the cheese is melted and golden brown. If using an oven, bake at the same temperature for 15-20 minutes.
