Introducing a simple and delicious mini kabocha squash salad recipe that anyone can easily make. This salad is perfect as a sandwich filling for busy mornings or as a light meal replacement when you want something quick and healthy. The combination of crunchy nuts and creamy squash is delightful, making it a healthy snack that everyone, young and old, will love.
Ingredients- 1 mini kabocha squash
- 1 packet of ‘Haru-Kkenut’ (a type of mixed nuts)
- 2 Tbsp Mayonnaise
- 1 Tbsp Honey
- 2 Tbsp Milk
Cooking Instructions
Step 1
If you plan to eat the skin, scrub the mini kabocha squash thoroughly with baking soda, rubbing vigorously. If you prefer not to use the skin, simply wash it well with water.
Step 2
Place the washed kabocha squash, while still slightly damp, into a plastic bag and microwave for 3 minutes. While the squash is cooking, finely chop the packet of ‘Haru-Kkenut’ with a knife.
Step 3
Carefully remove the kabocha squash from the microwave after 3 minutes. Cut it in half or into quarters and scoop out the seeds from the center.
Step 4
Now, peel the kabocha squash. I prefer to peel it completely because the bright yellow flesh makes the salad look more appealing. However, you can certainly leave the skin on if you like.

Place the peeled kabocha squash back into a clean plastic bag and microwave for another 3 minutes. This double cooking process ensures the squash becomes very tender.

Remove the squash from the second cooking cycle while it’s still hot. Use a masher or a fork to mash the squash until smooth. Ensure there are no large lumps.

To the mashed kabocha squash, add 1 Tbsp of honey for sweetness, 2 Tbsp of milk for creaminess, and 2 Tbsp of mayonnaise. Stir in all the chopped nuts. Depending on the moisture content of the squash, you may need to adjust the amount of milk to achieve your desired consistency. Mix everything thoroughly until well combined.
Step 8
Once everything is mixed, your delicious kabocha squash salad is ready to enjoy! You can eat it immediately, or store any leftovers in an airtight container in the refrigerator for a delightful chilled treat.
