How to Make Pumpkin Rice in an Electric Pressure Cooker

Ingredients- 1 mini sugar pumpkin (kabocha squash)

Cooking Instructions
Step 1
First, thoroughly wash the mini pumpkin’s skin. Scrub it well with baking soda, then soak it in a solution of water and a little vinegar for about 10 minutes for extra peace of mind.

Cut the washed pumpkin in half. Use a spoon to scrape out all the seeds from the inside. Also, trim off the top and bottom ends of the pumpkin for easy handling.
Step 3
Cut the prepared pumpkin into bite-sized pieces. It’s best to cut them into moderate sizes, as pieces that are too small might become mushy during cooking.
Step 4
Wash your rice as you normally would and place it in the rice cooker with the usual amount of water. Arrange the cut pumpkin pieces on top of the rice. Select the ‘white rice, high pressure’ cooking mode.
Step 5
