Pancake Batter Ingredients- 1 ripe banana
- 150g pancake mix
- 100ml milk
- 1 fresh egg
Cooking Instructions
Step 1
First, let’s make the pancake batter. In a bowl, combine 150g of pancake mix, crack in 1 fresh egg, and pour in 100ml of milk. Use a whisk to mix until smooth, ensuring there are no lumps. Be careful not to overmix; just blend until the dry ingredients are incorporated.
Step 2
Peel the banana and slice it into rounds about 0.5cm thick. It’s best to keep them at this thickness so they don’t fall apart during cooking.
Step 3
Now it’s time to cook the pancakes. Heat a non-stick pan over medium-low heat and melt 10g of butter. Once the butter is fully melted, reduce the heat to very low or briefly turn it off. Sprinkle 1 tablespoon of sugar evenly over the melted butter. The sugar will melt and create a lovely caramel flavor.
Step 4
Once the caramel is forming, carefully arrange the sliced bananas over it, making sure they don’t overlap. Prevent the bananas from sticking to the pan, and then gently pour the prepared pancake batter over the bananas, ensuring it covers them evenly.
Step 5
Cover the pan with a lid and cook on the lowest possible heat (simmer) for 10 to 15 minutes. Wait until the top of the batter is mostly set and small bubbles begin to appear. It’s crucial to manage the heat carefully to prevent burning.
Step 6
When the bottom of the pancake is golden brown, it’s time to flip it. Place a plate or another wide pan on top of the cooking pan, then carefully invert the pan to transfer the pancake onto the plate. Gently slide the pancake back into the original pan. Cover again and cook for another 3 minutes. This step ensures both sides are beautifully golden and cooked through.
Step 7
Carefully transfer the cooked banana pancake onto a serving plate. Finally, dust with a pinch of powdered sugar using a sieve for a beautiful presentation. Enjoy your delicious and sweet banana pancake! For an extra treat, feel free to serve with maple syrup or whipped cream.
