Main Ingredients- 400g sweet potato, peeled and prepared
- 2 eggs
- 1/2 tsp salt
- 1.5 Tbsp sugar
- 1/2 cup (100ml) milk
- 30g butter
- 2 Tbsp cake flour (approx. 20g)
- Vegetable oil for frying (generous amount)
- Cinnamon sugar (to taste)
Cooking Instructions
Step 1
First, peel the sweet potatoes thoroughly and then cut them into 1-2 cm thick pieces. Slicing them to a suitable thickness is important for achieving a tender texture in the churros.
Step 2
Place the sliced sweet potatoes in a microwave-safe bowl. Cover with plastic wrap or a lid slightly ajar, and microwave for 5-7 minutes until they are tender. They should be soft enough to be easily pierced with a fork.
Step 3
While the sweet potatoes are still hot from the microwave, transfer them to a blender or use an immersion blender to mash them into a smooth puree. Add 1/2 cup of milk, 1/2 tsp of salt, and 1.5 Tbsp of sugar, and blend until you have a smooth sweet potato mixture. This step is crucial for determining the sweetness and texture.
Step 4
Melt the 30g of butter by microwaving it in 30-second intervals twice, until completely liquid. Pour the melted butter into the sweet potato mixture along with the 2 Tbsp of cake flour. Use a spatula to mix everything until well combined and smooth, ensuring there are no lumps. Be careful not to overmix, as this can develop gluten and make the churros tough after frying; mix just until the ingredients are incorporated.

Now it’s time to pipe the dough. Fit a star-shaped piping tip into your piping bag (or a zip-top bag). Cut off the tip of the bag securely so the dough doesn’t leak out. Carefully fill the prepared piping bag with the sweet potato dough.

Heat a generous amount of vegetable oil in a deep frying pan or pot to about 160°C (320°F). Once the oil is at the right temperature, gently pipe the sweet potato dough in long strips directly into the hot oil. If you’re new to this or making them for kids, you can also pipe smaller shapes for easier handling.
Step 7
Pipe the dough to your desired length while frying. Once you’ve piped a strip for a churro, use chopsticks or clean scissors to cut the end of the dough. You can lightly touch the edge of the pot with the scissors to cut the dough cleanly without disturbing the shape.

After adding the dough, gently stir the churros with chopsticks to ensure they cook evenly and don’t burn. Fry them for about 3-5 minutes until they turn a beautiful golden brown color. Adjust the heat to ensure the outside is crispy while the inside is cooked through and soft.

Once the churros are nicely fried, transfer them to a plate lined with paper towels or parchment paper to drain excess oil. This step is key to achieving extra crispiness and preventing them from being greasy.

While the churros are still warm, roll them immediately in cinnamon sugar or plain sugar to coat. If you enjoy cinnamon, mix cinnamon powder with sugar. If you prefer just sweetness, roll them in plain sugar. You can also sprinkle powdered sugar on top if desired.
