I tried making Mung Bean Bingsu for the first time, and it was so delicious, just as good as red bean bingsu! The subtle sweetness and creamy texture of the mung beans combined with shaved ice, fruits, and chewy rice cakes create a delightful summer dessert.

Bingsu Ingredients

  • Cooked Mung Beans, 1/4 cup
  • Chewy Rice Cakes (Chal-tteok)
  • Water, 2 cups (for cooking mung beans)
  • Shaved Ice

Toppings & Fruits

  • Strawberries (frozen or fresh)
  • Blueberries (frozen)
  • Grapes
  • Gold Kiwi
  • Banana
  • Other favorite fruits

Mung Bean Seasoning

  • Sugar, 8 Tbsp
  • Salt, a pinch
  • Milk (for drizzling)
  • Syrup (optional, e.g., corn syrup, honey)

Cooking Instructions

Step 1

First, thoroughly wash the mung beans. Place the washed mung beans in a pot with 2 cups of water and boil until they are very soft. Once the mung beans are completely tender, add 8 tablespoons of sugar and a pinch of salt. Cook over medium-low heat, stirring occasionally, until the liquid has mostly evaporated and the beans are glossy. Since this is for bingsu, it’s best to make them slightly sweet for a delicious flavor. Taste and adjust the sweetness as needed.

Prepare the fruits for your bingsu. Keep frozen blueberries and strawberries as they are. For fresh grapes, remove any seeds and cut them into bite-sized pieces. Peel and slice the gold kiwi and banana. Using a variety of fruits you have on hand will make your bingsu even more special. Set the prepared fruits aside for now. Next, place ice in a blender and pulse until it’s coarsely shaved – not too fine, as it will melt quickly. Aim for a texture with a slight chew.

Arrange the coarsely shaved ice nicely in your serving bowl. Generously spoon the sweet, cooked mung beans over the ice. Artfully arrange the prepared fruits on top, adding a few pieces of chewy rice cake, which is a bingsu essential. Finally, pour milk over the bingsu for a creamy finish. If desired, drizzle with strawberry corn syrup or honey syrup for extra sweetness and flavor.
