Main Ingredients

  • 3 medium sweet potatoes, boiled and mashed
  • 1/4 carrot, finely diced
  • 1/4 onion, finely diced
  • Mozzarella cheese (as desired)
  • 100g Spam, finely diced
  • A few leftover dinner roll pieces (or bread crusts), finely crumbled

Coating Ingredients

  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • Frying oil

Seasoning

  • Salt to taste
  • A pinch of black pepper

Cooking Instructions

Step 1

First, peel the cooked sweet potatoes and mash them thoroughly with a fork or masher until smooth and lump-free. Mashing them while still warm makes the process much easier and results in a smoother texture.

Step 2

Finely dice the carrot and onion. Dicing the vegetables into small pieces will ensure they blend well with the other filling ingredients and provide a pleasant texture when bitten into.

Step 3

Dice the Spam into small pieces. For an enhanced flavor and to remove excess grease, you can lightly sauté the diced Spam in a pan before adding it to the mixture. This step adds a delicious savory note.

Step 4

In a large bowl, combine the mashed sweet potatoes, diced carrots, diced onion, prepared Spam, and the crumbled dinner roll pieces (or bread crusts). Season lightly with salt and pepper, keeping in mind the saltiness of the Spam. If you’re adding mozzarella cheese, mix it in at this stage. Mix all the ingredients thoroughly until well combined to form the croquette mixture.

Step 5

Shape the mixture into individual croquettes. You can make them round or slightly flattened, about bite-sized. Avoid making them too large, as this ensures they cook through evenly and are easy to fry.

Step 6

Prepare your dredging station for coating the croquettes. First, lightly coat each croquette in flour, shaking off any excess. Next, dip them into the beaten eggs, ensuring they are fully coated. Finally, press the croquettes firmly into the breadcrumbs, making sure they are covered evenly. This thorough coating is key to achieving a perfectly crispy crust. Heat enough oil in a pan to about 170-180°C (340-350°F). Carefully place the coated croquettes into the hot oil and fry for a few minutes on each side until golden brown and crispy. Be mindful of the heat; frying on excessively high heat can burn the outside before the inside is cooked.

Step 7

Once golden brown and crispy, remove the croquettes from the oil and place them on a wire rack or paper towels to drain any excess oil. Arrange them attractively on a serving plate. These croquettes are best enjoyed warm and fresh. Serve with chili sauce on the side for dipping, if desired!
