Main Ingredients

  • 1 medium Onion
  • 3 large Eggs
  • 20g Carrot (approx. 1/5 of a small carrot)
  • 20g Garlic Chives (about a handful)

Batter and Seasoning

  • 1 tsp Chicken Stock (or dashi broth)
  • A little Cooking Oil (for pan coating)
  • All-purpose Flour or Pancake Mix, as needed (approx. 50-70g)

Cooking Instructions

Step 1

First, wash and peel the onion. Slice it into rounds about 1 cm thick. To maintain its round shape, slice gently, as if lightly pressing. You can carefully push out the central core with a chopstick if needed, creating a perfect ring.

Lightly coat the edges of the sliced onion rings with flour. Applying a thin layer of flour helps the egg mixture adhere better and contributes to a crispier texture.

Wash the garlic chives thoroughly under running water and pat them dry. Finely chop them into small pieces (about 0.5 cm). The chives will add a wonderful aroma and flavor to the pancake.

Wash and peel the carrot, then mince it very finely. Finely mincing the carrot makes it easier for children to eat and also adds a lovely color to the pancake.

In a bowl, crack the 3 eggs and whisk them well. Add the minced carrot and chopped chives to the beaten eggs. Stir in 1 tsp of chicken stock for seasoning. If you don’t have chicken stock, you can use dashi broth or a pinch of salt. Mix everything together until well combined.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the floured onion rings onto the hot pan. Ensure the onions don’t stick and cook for about 2-3 minutes until one side is golden brown.

Once the bottom side of the onion is golden brown, carefully flip it using a spatula. Then, spoon the egg and vegetable mixture into the center hole of each onion ring. Reduce the heat slightly to low-medium and cook until the egg mixture is set and the pancake is cooked through, ensuring both sides are golden brown.

Once cooked, you can cut the onion and chive pancakes into serving pieces or arrange them beautifully on a plate. They are best enjoyed warm. You can also serve them with a side of soy-based dipping sauce if desired.
