Main Ingredients

  • 700g Korean radish (about 1/3 medium size)
  • 1 ripe Fuyu persimmon (Hongsi)
  • 5g chopped green onion (about 1/4 stalk)

Seasoning Ingredients

  • 3 Tbsp Gochugaru (Korean chili powder)
  • 2 Tbsp vinegar
  • 1.5 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp minced garlic
  • 0.5 Tbsp salt

Cooking Instructions

Step 1

First, peel the ripe persimmon (Hongsi) and prepare it. If there are seeds, it’s best to remove them.

Step 1

Step 2

To make the seasoning: In a bowl, add 1 Tbsp of minced garlic and 2 Tbsp of vinegar.

Step 2

Step 3

Next, add 1.5 Tbsp of anchovy sauce.

Step 3

Step 4

Add 2 Tbsp of Gochugaru (Korean chili powder) to give it color.

Step 4

Step 5

Finally, add 0.5 Tbsp of salt.

Step 5

Step 6

Mix all the seasoning ingredients thoroughly with a whisk or spoon until well combined, creating the seasoning paste. Taste and adjust seasoning if needed, according to your preference.

Step 6

Step 7

Julienne the radish into thin strips, about 0.5 cm thick. Thicker strips will provide a crunchier texture, while thinner strips will be softer. (Tip: You can lightly salt the radish and let it sit for a bit to draw out moisture, which makes it crunchier and last longer. However, today we will use it directly.)

Step 7

Step 8

In a large bowl, place the julienned radish and add 1 Tbsp of Gochugaru.

Step 8

Step 9

Gently mix the Gochugaru with the radish using your hands to evenly coat the radish with color. This step ensures the radish salad has a beautiful, appetizing hue.

Step 9

Step 10

Add all of the prepared seasoning paste to the radish and mix again until the seasoning is evenly distributed.

Step 10

Step 11

Add the peeled persimmon (mashed or finely chopped) and the chopped green onion to the bowl.

Step 11

Step 12

Gently mix in the persimmon and green onion until all ingredients are well combined. Using persimmon instead of sugar adds a natural sweetness and boosts the nutritional value, resulting in an even healthier and tastier radish salad.

Step 12

Step 13

Plate the finished persimmon radish salad attractively. The method is similar to making regular radish salad, but the addition of persimmon at the end enhances the flavor and nutrition. Delicious persimmons are abundant in markets these days, so make sure to create this tasty persimmon radish salad using seasonal ingredients for both health and flavor!
